Hello everybody! Today I’m here with a new recipe for chocolate and nuts cupcakes.
Ingredients (for 11 cupcakes)
150g of plain flour
25g of cocoa powder
100g of butter
150g of sugar
5g of baking powder
125ml of milk
75g of nuts
A pinch of salt
First of all, pre-heat the oven at 170°C.
Whip the butter and the sugar together until they get pale and fluffy, then add the eggs one at a time. Sieve together the flour, the cocoa powder, the baking powder and the pinch of salt and add them in the mixture alternating them with the milk. Then add the chopped nuts. If the mixture looks a bit too thick, loosen it up with a dash of milk.
Fill the cupcake cases with the mixture and put them in the oven for about 20 minutes. Mine took 23 minutes, so what I’d suggest is to set a timer for 15 minutes and check the cakes by sticking a toothpick in one of them. If it comes out clean, it means they’re ready, otherwise put them back in the oven for another 6/7 minutes.
Once they’re out of the oven, let the cool. You can put buttercream on them (whip together 75g of butter and 150g of sifted icing sugar) but today I wasn’t feeling it so I just sprinkled sone icing sugar on top of them!
